Using a very sharp small knife, or a pumpkin carving knife, or whatever small, sharp utensil you need - slowly and gently carve out the faces on the candle shells.

Yes...just like with real pumpkins...you'll make mistakes...or have small pieces break. And...just like with real pumpkins...think of it as a creativity challenge. (It's also a good reason to make a few extra balloon candle forms in case one gets broken.)
